平日大都是打邊爐才吃蚌,想不到用它來做沙律、意大利飯或酥皮焗,也同樣美味,城景國際City Cafe本月便以蚌類和海鮮為自助晚餐主題,廚師以不同手法來烹調桂花蚌、貴妃蚌、象拔蚌等,令爽脆口感更加突出,例如桂花蚌秋葵青芥末咯嗲,爽甜的桂花蚌配滑溜秋葵,以青芥末醬調味,微辣醒胃,卻不失鮮甜。金湯堂灼三鮮蚌帶中式風味,上湯以金華火腿、老雞、赤肉等熬十多小時而成,用來灼桂花蚌、貴妃蚌、珊瑚蚌等,鮮爽味甜,令人回味。現凡惠顧自助晚餐,即送每位一客酥皮焗雙蚌,內有桂花蚌及貴妃蚌,與蟹肉同焗至金黃,外脆內嫩,蚌迷別錯過。 |
